The Process:

  1. Cook Beans: Start with dried beans, typically pinto. Soak them overnight, then simmer until tender in fresh water with aromatics like onion, garlic, and a bay leaf. Drain, reserving some cooking liquid.
  2. Mash & Flavor: In a skillet, heat a little fat (lard or oil). Add the cooked beans and mash them roughly with a potato masher or fork. Stir in some of the reserved cooking liquid until you reach your desired consistency. Season generously with salt and pepper.
