Homemade Refried Beans
Making refried beans from scratch elevates this comfort food classic. Forget the canned stuff and unlock deep, satisfying flavor.
The Process:
- Cook Beans: Start with dried beans, typically pinto. Soak them overnight, then simmer until tender in fresh water with aromatics like onion, garlic, and a bay leaf. Drain, reserving some cooking liquid.
- Mash & Flavor: In a skillet, heat a little fat (lard or oil). Add the cooked beans and mash them roughly with a potato masher or fork. Stir in some of the reserved cooking liquid until you reach your desired consistency. Season generously with salt and pepper.
- Enhance: For richer flavor, sauté finely chopped onion and garlic in the skillet before adding the beans. A pinch of cumin or a dash of your favorite hot sauce can add extra depth.
