The Method

  1. Choose Your Rice: Use short-grain Japanese rice. It has the right starch content for stickiness.
  2. Wash Thoroughly: Rinse the rice under cold water multiple times until the water runs clear. This removes excess starch.
  3. Cook: Use a 1:1 ratio of rice to water (adjust slightly based on your rice cooker or pot). Cook until done.
  4. Season: Gently fold in a seasoned vinegar mixture (rice vinegar, sugar, salt) while the rice is still hot. Use a cutting motion to avoid mashing.
