Your Essential Sushi Rice Guide
Achieving that perfect sticky-yet-fluffy sushi rice is key to great homemade sushi. It’s simpler than you think, starting with the right kind of rice and a meticulous washing process.
The Method
- Choose Your Rice: Use short-grain Japanese rice. It has the right starch content for stickiness.
- Wash Thoroughly: Rinse the rice under cold water multiple times until the water runs clear. This removes excess starch.
- Cook: Use a 1:1 ratio of rice to water (adjust slightly based on your rice cooker or pot). Cook until done.
- Season: Gently fold in a seasoned vinegar mixture (rice vinegar, sugar, salt) while the rice is still hot. Use a cutting motion to avoid mashing.
- Cool: Fan the rice as you mix to cool it down quickly and give it a glossy sheen. Let it sit for a few minutes before using.
This simple process transforms regular white rice into the ideal foundation for your sushi rolls.
